Carrot Cake
2 c. flour sifted
1 tsp baking powder
1 tsp. soda
1 tsp. cinnamon
1/4 tsp. salt
Combine 1/2 c. salad oil & 2 c. sugar; mix well and add 4 eggs,
one at a time; beat well after each. Gradually add dry
ingredients. Mix well; add 2 cups finely grated carrots. (may
also add 1 c. nuts if desired) Bake in 3 8" pans, well greased &
floured. Bake at 350 degrees for 50-60 min. When cool,
remove from pans.
Icing
1 stick butter 1 8oz. pkg. cream cheese
Beat until creamy. Add 1 tsp. vanilla, 1 box powdered sugar.
Add milk or cream until nice & creamy & easily spread. Can
add 1/2 c. coconut if desired.
